Ingredients
1/2 glass of red lentils
A medium sized potato
A small sized carrot
A medium sized onion
2 spoons of olive oil
Black pepper
Salt

Wash
 the red lentils, chop the potato, carrots and onion in very small 
cubes, and put in a saucepan. Add 5 glasses of warm water and bring to 
the boil over a medium heat. When it comes to the boil, simmer over a 
low heat until the lentils are soft and mushy. Check the water level 
regularly and if necesarry add some more hot water. It takes about 30-40
 minutes to cook. Then add salt, black peper, dry mint and oil and keep 
simmering for a few minutes more.  
Then mix in a blender to mash the
 potatos and carrots. Take care as it hot. Your lentil soup is ready to 
eat.  I recommend squeezing some lemon in when you eat.
