RED LENTIL SOUP






 


Ingredients
1/2 glass of red lentils
A medium sized potato
A small sized carrot
A medium sized onion
2 spoons of olive oil
Black pepper

Salt
Dry mint


Method 

Wash the red lentils, chop the potato, carrots and onion in very small cubes, and put in a saucepan. Add 5 glasses of warm water and bring to the boil over a medium heat. When it comes to the boil, simmer over a low heat until the lentils are soft and mushy. Check the water level regularly and if necesarry add some more hot water. It takes about 30-40 minutes to cook. Then add salt, black peper, dry mint and oil and keep simmering for a few minutes more.

Then mix in a blender to mash the potatos and carrots. Take care as it hot. Your lentil soup is ready to eat. I recommend squeezing some lemon in when you eat.

 Ingredients

A cucumber (medium sized)
A glass of pure yoghurt
Garlic 1-2 cloves
Salt
Fresh dill or dry mint


Method

Grate or chop in very small cubes the cucumber in a bowl.
Whisk the yoghurt and add to the cucumber.
Grate the garilc and add it to the mixture.
Put in some salt and mix it. 
If it is thick you can add 3-4 spoons of water.
If you use dill chop and sprinkle on or sprinkle the dry mint in.

Note. If you dont like garlic you can do cacik without garilc too.

HOME MADE YOGHURT

                         

                          

 

Here is an easy and healthy way to make your own yoghurt. 

All you need is a pan or saucepan of milk and a spoonful of pure yoghurt.

Pour all the milk (1/2 lt)  in the pan or saucepan and leave to boil on the hob.
When it starts boiling reduce the heat by half and stir the milk with a spoon (This will prevent the milk boiling over). Keep stirring for a few minutes, then turn off the heat and leave milk to get cool.


It shouldn't be too cold or hot. You can check with your little finger.


When it has cooled down, put the yoghurt into a bowl and stir with a fork. While stirring the yoghurt pour whole milk slowly into the bowl. Cover it with a plate or protective cap and then with a cloth to keep it warm. Don't move it. Leave it for at least 4 hours after which, remove the cloth and put it yoghurt into fridge. Leave it in fridge a few hours.


Your home made yoghurt is then ready to eat. If you don't like pure yoghurt you can put in some jam or grate some fruit and mix it in.
