CHEDDAR CHEESED SPINACH


 

 

 

ngredients

1/2 kilo spinach
a medium sized onion 
8 table spoons of olive oil
1 glass of grated c
heddar cheese
salt



Directions

First wash the spinach well. Then put it a pot and fill it with water. Sprinkle some vinegar and wait 5-10 minutes.
The vinegar will clean any sand and dirt away. While waiting chop the onion. 
Then pour the water away and drain, if it necessary cut off the spinach stems.

Put some olive oil in a pan and sauté the onions on a medium heat. Then stir in the spinach
and cook for about 15-20 minutes. Whilst cooking stir it now and again.


After the spinach is cooked, put it on a tray and spread evenly. 
Add grated cheddar cheese to the spinach. 
Pre-heat your oven to 180 degres and cook until the cheese melts.
I recommend you eat it hot.

POTATO SALAD



 

 Ingredients

4 potatos
A medium sized onion
A bunch of dill
A tbl spoon red pepper flakes
7 tbl spoons of olive oil
lemon
salt

 

Method

Put the potatoes in a saucepan and cover with water.
Let them boil until cooked. While the potatoes are boiling, chop the onion, and the dill. 


When the potatoes are cooked peel off the skin and cut them into cubes. Place them in a big bowl. Add the onion and the chopped dill.


Then add 7 tbl spoons of oil, salt, and red pepper flakes . Squeeze lemon and mix all them.
If you like you can serve by adding some olive to it.

MINCE MEAT PIZZA







Ingredients

For the dough


2.5 glasses of flour
2.5 table spoons of plain yoghurt
1/2 glasses of sunflower oil
3 table spoons of water
1/2 tea spoon of baking powder
1/2 tea spoon of baking soda
salt


 



For the filling on the top

150 gr. medium fat finely chopped meat
1 medium size tomato
1 medium size fresh red pepper
1-2 clove garlic
1/2 bunch of parsley
Black papper
Salt

 

 

Method
First prepare the filling for the top. Put the mince in a big bowl. Finely chop the tomato, parsley, garlic and fresh red pepper very small and add to the mince.
Add black pepper and salt and mix all ingredients.
Let them stand and prepare dough.
Put the flour in a big bowl and make a well in the centre. Add all the ingredients and knead well.
When your dough is ready, put some oil in a tray and rub it in. This will protect your dough from sticking to the tray.
Then roll out the dough on a tray as thin as possible . Then spread the filling very thinly over the top. Put your tray on the middle shelf of your oven. Bake at a 180 degrees.
It takes about 40 minutes to bake.

RED LENTIL SOUP






 


Ingredients
1/2 glass of red lentils
A medium sized potato
A small sized carrot
A medium sized onion
2 spoons of olive oil
Black pepper

Salt
Dry mint


Method 

Wash the red lentils, chop the potato, carrots and onion in very small cubes, and put in a saucepan. Add 5 glasses of warm water and bring to the boil over a medium heat. When it comes to the boil, simmer over a low heat until the lentils are soft and mushy. Check the water level regularly and if necesarry add some more hot water. It takes about 30-40 minutes to cook. Then add salt, black peper, dry mint and oil and keep simmering for a few minutes more.

Then mix in a blender to mash the potatos and carrots. Take care as it hot. Your lentil soup is ready to eat. I recommend squeezing some lemon in when you eat.

 Ingredients

A cucumber (medium sized)
A glass of pure yoghurt
Garlic 1-2 cloves
Salt
Fresh dill or dry mint


Method

Grate or chop in very small cubes the cucumber in a bowl.
Whisk the yoghurt and add to the cucumber.
Grate the garilc and add it to the mixture.
Put in some salt and mix it. 
If it is thick you can add 3-4 spoons of water.
If you use dill chop and sprinkle on or sprinkle the dry mint in.

Note. If you dont like garlic you can do cacik without garilc too.

HOME MADE YOGHURT

                         

                          

 

Here is an easy and healthy way to make your own yoghurt. 

All you need is a pan or saucepan of milk and a spoonful of pure yoghurt.

Pour all the milk (1/2 lt)  in the pan or saucepan and leave to boil on the hob.
When it starts boiling reduce the heat by half and stir the milk with a spoon (This will prevent the milk boiling over). Keep stirring for a few minutes, then turn off the heat and leave milk to get cool.


It shouldn't be too cold or hot. You can check with your little finger.


When it has cooled down, put the yoghurt into a bowl and stir with a fork. While stirring the yoghurt pour whole milk slowly into the bowl. Cover it with a plate or protective cap and then with a cloth to keep it warm. Don't move it. Leave it for at least 4 hours after which, remove the cloth and put it yoghurt into fridge. Leave it in fridge a few hours.


Your home made yoghurt is then ready to eat. If you don't like pure yoghurt you can put in some jam or grate some fruit and mix it in.
